Cranberry Brie Bites

These cranberry brie bites are so easy, and so versatile! These are one of my favorite holiday treats because you can easily change your the ingredients to create new versions.

If you don’t like brie cheese, simply switch it out for your favorite cheese. You can always use fruit preserves instead of the cranberry sauce as well.

They can be frozen and reheated for the perfect appetizer to add to any holiday!

INGREDIENTS

1 (8-oz.) tube crescent dough Cooking spray Flour, for surface 1 (8-oz.) wheel of brie 1/2 c. whole berry cranberry sauce (you can also use any type of fruit jam)

Optional: 1/4 c. chopped pecans 6 sprigs of rosemary, cut into 1" pieces.

DIRECTIONS:

Cranberry Sauce

1. Bring about 1 cup of water and 1 cup of sugar to a boil.

2. Add about 1/2 cup to 1cup of orange juice.

3. Add fresh cranberries. you don’t want too much liquid, just enough to fully submerge the cranberries. once they are soft use a fork to crush up some of the berries. If you find it has too much liquid, you can always drain a little.

4. Remove from heat and allow the mixture to thicken and cool.

Cranberry Brie Bite Directions

1. Preheat oven to 375° and line the tray with baking cups.

2. On a lightly floured surface, roll out crescent dough, and pinch together seams. Cut into triangles. Place into baking cups.

3. Cut brie into small pieces and place inside the crescent dough. They do not have to be perfect, and it’s ok if they come out of the cups a little.

4. Top with a spoonful of cranberry sauce, some chopped pecans (optional), and one little sprig of rosemary (optional).

5. Bake until the crescent pastry is golden, about 15 minutes.
